Saak Bhaja (Indian-Style Greens)

<p>Simple. Weirdly awesome. Try with a mix of mustard greens and/or collards, kale, chard, turnip greens, broccoli greens, radish tops, any and all of it. Five-spice is a mixture of black mustard seeds, cumin seeds, fennel seeds, whole fenugreek and kalonji seeds.</p>

Ingredients
2 Tbs vegetable oil
1/4 tsp five-spice
2 cups thinly sliced onion
1/2 tsp ground turmeric
1/4 tsp salt
3 cups firmly packed slivered greens

Step by Step Instructions
  1. Heat oil over medium-low in wide pan. Fry five spice (black mustard seeds, cumin seeds, fennel seeds, fenugreek and kalonji seeds). Add onions and fry until translucent (2-3 m), stirring. Stir in turmeric and salt.
  2. Add greens. Cook covered on low heat until greens are limp and tender (5-10 m). Serve immediately.
