Cubanelle peppers
OR banana peppers
2 large
Eggs (lightly beaten)
3 cup
Cooked shredded chicken breast
1 cup
Salsa
3/4 cup
Soft breadcrumbs
1/2 cup
Cooked rice (long grain)
2 cups
Pasta sauce (meatless)
Step by Step Instructions
- Preheat oven to 350 degrees. Remove the tops of the pepeprs and the seeds, then discard the tops and seeds. Mix the eggs, chicken, salsa, breadcrumbs and rice together in a bowl, then spoon the mixture into the peppers.
- Spread the pasta across the bottom of a greased 9x13 inch baking dish. Put the peppers into the dish, cover, then bake for 60 to 65 minutes.
