Rainbow Fruit Waffles

Ingredients

Waffles, homemade or prepackaged
1/4 cup
Ricotta cheese
1 tablespoon
Coconut butter
OR some plain yogurt
OR whipped cream
FOR THE RED ARCH:

Strawberries (halved & thinly sliced)
OR some raspberries (thinly sliced)
OR some cherries (pits removed)
OR some pomegranate seeds
FOR THE ORANGE ARCH:

Clementine (segmented & thinly sliced)
OR an orange (segmented & thinly sliced)
OR a peach (peeled & thinly sliced)
OR a nectarine (peeled & thinly sliced)
OR an apricot (peeled & thinly sliced)
FOR THE YELLOW ARCH:

Pineapple ring ( finely chopped)
OR a banana (thinly sliced)
OR a mango (peeled and thinly cut into small peices)
FOR THE GREEN ARCH:
1 small
Kiwi (peeled & finely chopped)
OR a slice of honeydew melon (cut into small peices)
OR a pear (peeled & thinly sliced)

Step by Step Instructions
- Prepare the waffles and allow them to cool for 2 or 3 minutes before topping.
- If using, mix the ricotta and coconut butter. Spread the mixture in an arch pattern over the top of the waffles. Reserve a small amount for later.
- Starting with the red layer, arrange the fruit layers in a rainbow arch pattern atop the ricotta mixture. Put small dollops of ricotta mixture at the ends of the rainbow to make small "clouds"
- You can also use yogurt or whipped cream instead of the ricotta cheese mixture, simply use one them instead when the recipe calls for the other mixture.
